Whether side or outside…its still May! And tomorrow is Cinco-de-Mayo! Ole!
I’ll probably celebrate by making white chicken enchiladas . I believe my recipe came from Anita Padgett…way back in the Virginia years. So white cheesy sauce instead of the red sauce. Who knows, I may mix things up and do some hamburger(mince) with red, and chicken with white. Look out…here come other leftover meals! I may freeze the others before the final bake. Yum! Interesting note- they sell a tortilla which is a mix of corn and wheat, and its very good! Local tortilla chips are very expensive and practically nonexistent. I’m grateful for the commissary.
Anyway, Boris Johnson is back from Covid and recovery, and he is careful about “next steps” as they need to be. I think he has only done the 1 press conference since being back. We have just passed the peak but don’t want a significant second wave. I don’t either. I think next week he will set out steps to re-open….but no date as to when. Seems wise. They have decided to keep all the UK on the same time line, rather than to open up certain areas with fewer people first.
I’m starting to make some bunting out of scraps…May 8 is the 75th anniversary of VE Day. And while there will be no parades etc, people have been encouraged to get and display bunting. This should be right up my alley, so I’ve been scrounging for red, white and blue scraps. John’s Dad and Stepdad both fought in France, and were wounded in France, while fighting for the Americans. Both were D-day plus 6. John’s Dad was shot in the hip, and Francis was catching a ride on a tank…which then hit a land mine, causing him to fall off…then the tank rolled over him…but luckily is was very muddy. Whew, he had a broken back, which never caused him any trouble in later years. Can you believe it? So they both went back stateside to recuperate. We remember all the Military folks who have done so much, suffered so much and kept us safe.
Its me-made-May where many people who love to sew promote it by showing what they have sewn. This is my second year participating. I sometimes forget to include all the hashtags. Is there an easy way to do that?
I did my first Zoom line dance with Jody’s Dance Fitness from the Senior Center. I loved it! Thanks for sending me the meeting details! I also met a neighbor and got reconnected with a dance class here in Oundle. The teacher did individual WhatsApp videos and sent 7 to me. I am such a happy camper. These things really help me not feel so alone! Dancing with friends- sort of. Still…it rocks!
Here are some pictures from my walk today. Temps around 50.
Is spring gorgeous or what?
Last one is me trying to take my own pictures using my iPad 10 second delay. I’m learning.
Time to send this one off and make some dinner. Love you all. We are doing great! Our struggles are tiny. We will get through this!
